Detailed Job Descriptions


1. Executive Chef

Location: Main Restaurant, Vancouver Harbour
Responsibilities:

  • Lead all kitchen operations and manage a team of 30+ staff
  • Design and execute seasonal, sustainable menus
  • Oversee food quality, kitchen hygiene, and cost control
  • Work closely with the General Manager on culinary vision and strategy

Requirements:

  • 10+ years of kitchen experience, 3+ as Head/Executive Chef
  • Background in fine dining or luxury hospitality
  • Culinary degree or Red Seal certification preferred
  • Strong leadership and organizational skills

2. Sous Chef

Location: Bistro & Events Kitchen
Responsibilities:

  • Assist the Executive Chef in running the kitchen
  • Supervise prep and line cooks during service
  • Monitor food safety, portion control, and plating standards
  • Manage kitchen scheduling and inventory when needed

Requirements:

  • 5–7 years of experience in a commercial kitchen
  • Experience in high-volume settings
  • Excellent time management and multitasking ability

3. Pastry Chef

Location: Shared Kitchen (Dessert Division)
Responsibilities:

  • Create dessert menus, pastries, and plated sweets
  • Prepare daily desserts for à la carte and banquets
  • Lead a small team of pastry assistants and bakers
  • Maintain consistency in quality and visual appeal

Requirements:

  • Formal pastry training or equivalent experience
  • Skilled in chocolate, fondant, mousses, and plated desserts
  • Passionate about innovation and presentation

4. Chef de Partie (Station Chef)

Responsibilities:

  • Lead a kitchen station (sauté, grill, pastry, etc.)
  • Train and supervise commis and line cooks
  • Prepare dishes to precise recipes under time pressure
  • Maintain cleanliness and safety on your station

Requirements:

  • 3+ years of experience in a professional kitchen
  • Sound knowledge of food safety and station management
  • Great attitude and teamwork spirit

5. Commis Chef

Responsibilities:

  • Assist station chefs with prep and basic cooking
  • Learn recipes, techniques, and plating standards
  • Rotate through stations as part of training

Requirements:

  • 1–2 years of kitchen experience or culinary school grad
  • Desire to grow and learn from senior chefs
  • Good knife skills and stamina

6. Prep Cook

Responsibilities:

  • Prepare ingredients including chopping, portioning, and labeling
  • Follow prep lists for each shift
  • Support chefs during peak times

Requirements:

  • Reliable and organized
  • Can handle repetitive tasks with care
  • Basic food prep knowledge

7. Line Cook

Responsibilities:

  • Prepare and serve dishes during lunch/dinner services
  • Keep station stocked, clean, and ready at all times
  • Communicate with expo and other line staff

Requirements:

  • Fast, efficient, and clean working style
  • 2+ years experience preferred
  • Knowledge of timing and ticket order flow

8. Grill Cook

Responsibilities:

  • Operate charbroil grill and open-flame kitchen equipment
  • Cook proteins to precise temperatures
  • Manage seafood and steak station

Requirements:

  • Previous grill or BBQ experience required
  • Understanding of timing, seasoning, and temperatures
  • Calm under pressure

9. Kitchen Steward

Responsibilities:

  • Ensure kitchen is stocked with clean utensils and equipment
  • Sanitize workstations and floors
  • Assist chefs with waste disposal and supplies

Requirements:

  • Physically fit, organized, and reliable
  • Basic understanding of hygiene protocols
  • Willing to work flexible hours

10. Restaurant Dishwasher

Responsibilities:

  • Wash dishes, pots, pans, and kitchen tools efficiently
  • Operate commercial dishwashing machines
  • Support in cleaning and organization during closing shifts

  • Entry-level position

  • Can lift up to 20kg and stand for long hours
